In our house, summer means BBQ'S, camping trips and lots and lots of company !
We love to entertain, but nobody likes to miss their own party doing all the work. the recipes in this section are easy to make ahead ( or just easy to make !) and delicious to eat. So get out there, cause summer is short !
CAMPFIRE POTATOES or FAUX-TATOES
Potatoes are one of the easiest things to cook on a camping trip.
Whether over the coals or on the BBQ, these are our faves.
Take as many new potatoes, washed ( and peeled if desired ) as you need for your campers. ( For faux-tatoes, use cauliflower florettes instead for a lower carb dinner.)
Usually 1 large or 2-3 small per camper plus a couple extra for larger appetites. slice or cut in chunks and spread on a double layer of heavy duty tin foil coated in olive oil.
Add your favorite herbs and GF spices.
We like fresh herbs, such as parsley, lovage and onions, with a little garlic for kick.
salt and pepper if you wish and then throw a bit of butter or more oil on the top.
Cover in another double layer of foil . seal edges securely and roast over low heat until tender, flipping a couple times so it doesn't burn.
Easy and the best part ? no dishes to wash !
You can even add other veggies if you want . We add , turnip or zukes and celery too.
FROZEN TREATS
Kids ( and kids at heart ) love a cold treat on a hot day, but store bought Popsicles are not only full of food coloring & other additives that may not be gluten free.

While you can easily and inexpensively freeze any combination of juice in Popsicle molds
sometimes it's nice to get a little more creative.
Some suggestions....
Smoothie pops
in a blender , puree
a handful of blueberries, raspberries or other low carb fruit
1 cup plain sour cream
1/4 cup water
a few drops liquid stevia, to taste

pour in mold and freeze
Dairy free Tropic pops
combine in blender 1 can of full fat coconut milk
1/2 cup of water
2 tsp lime juice
liquid stevia to taste
2 tsp lime juice
liquid stevia to taste
pour in mold and freeze
Low Carb Tea Pops
2 cups caffeine free tea of your choice - I like cranberry or other fruity flavors for this
a few drops liquid stevia to taste
