camp potatoes


Potatoes are one of the easiest things to cook on a camping trip. Whether over the coals or on the BBQ, these are our faves.
Take as many new potatoes, washed ( & peeled if desired ) as you need for your campers.
Usually 1 large or 2-3 small per camper plus a couple extra for larger appetites. slice or cut in chunks & spread on a double layer of tin foil coated in olive oil. add your favorite herbs & GF spices. We like fresh parsley, lovage & onion with a little garlic for kick. salt & pepper if you wish & a bit of butter or more oil on the top. cover in another double layer of foil . seal edges securely & roast over low heat until tender, flipping a couple times so it doesn't burn. Easy & no dishes to wash ! You can even add other veggies if you want . We add turnip or zukes & celery too.
Who says camp food always has to be hotdogs !

spinach salad

a bowl full of spinach leaves ( or lettuce if you insist)
a few handfuls of chopped mushrooms
1 apple, chopped into small cubes & dipped briefly in lime juice so it doesn't brown
1 small package creamy goat cheese, microwave & mix into apple.
1/2 of a( chopped ) cuke - if desired.
mix all & serve with your favorite honey mustard dressing
optional additions - bacon bits, chives, cheese cubes.
